The One where She shares a Recipe!

I love baking! And it is the middle of winter so there is nothing better than a pudding! I’ve been craving this for a while now and had a bit of free time to make it today – it is super easy and I love that I don’t need to get out the dreaded electric mixer! Enjoy…

Butterscotch Self-Saucing Pudding

Ingredients:
Batter:
¼ cup Brown Sugar
1 ¼ cups self raising flour
100g Butter, melted
1 Egg
½ cup milk
2 tablespoons golden syrup
Dry Mix:
½ cup brown sugar
1 tablespoon cornflour
Sauce:
2 tablespoons golden syrup
1 ½ cups boiling water

Method:
®     Preheat oven to 180°C.
®     Grease a 1.5litre oven proof dish.
Batter:
®     Combine brown sugar and self raising flour in a bowl. Add melted butter, milk, egg and golden syrup and stir until combined.
®     Spoon into greased dish.
Dry Mix:
®     Combine brown sugar and cornflour.
®     Sprinkle evenly over pudding mixture.
Sauce:
®     Combine boiling water and golden syrup.
®     Slowly pour over the back of a large metal spoon to cover pudding mixture.
Bake: 40 – 45 mins or until skewer inserted comes out clean.
Serve: warm with double cream.
